Wheat, rye, barley, oat, rice and maize are an important chain link in the sustainable agriculture. Grain, flour and by-products are used as natural ingredients. Their main components provide nutritional benefits. They are delicious, flavourful and satiable. They have technological effects such as rheological, flavouring, structuring, encapsulation, ... combined with a positive image.

 

Nowadays, products made from grains are often used as versatile vehicles for functional ingredients. Yet grains themselves are sources of helpful functional (minor) components. How to detect these components and their effects in vitro and in vivo?
The conference will provide the possibility to discus latest results and to find arguments to reinforce the thesis “Grains are functional”. Participants with good media skills will help to communicate these facts in future.

SATELLITE PROGRAMME

The workshop „Milling and Extrusion for Non-experts“ will give an overview with practical examples and trials of the skills, possibilities, challenges and limits of milling and extrusion used to transform grains into valuable products for industry, craft and consumers as well as for scientific evaluations and innovations.
